
A 100% whole-bunch fermented Syrah Nouveau produced from fruit grown in the rolling granitic hills of Metcalfe, which is located at the elevated Southern end of the Heathcote GI.
Hand-picked whole bunches underwent three weeks of carbonic maceration before the lids were lifted and the fruit was given a light stomp. The juice was gently jugged over for another week. The wine was pressed off to tank where fermentation was completed by wild yeasts. A small amount of sulphur was added whilst racking in preparation for bottling, where we used crown seal closures.
This is medium-bodied and perfumed with some savoury whole-bunch characteristics that can be served slightly chilled.
Minimal sulphites added.
