The 2017 Dunn’s Paddock Shiraz was hand-picked in late March after the best growing season we have had for several years. The fruit had lovely ripeness and acid balance and was wild yeast fermented over 2 weeks. It was then basket pressed and left to mature on French oak for nearly 2 years. The resulting wine shows lovely elegance, balance and weight. The nose is of blackberry, plum and spice with notes of cedary oak. The dark fruit and cloves flow onto the palate and the oak is well integrated with silky tannins. This shiraz will no doubt age gracefully for many years but the sweet fruit and fine tannin structure make it eminently approachable now.
